Doing a 1:1 substitution would probably change the macros too much but that doesn’t mean that you have to eat dairy to eat a ketogenic diet. If you want to use the meal plan you’d have to adjust it with other sources of fat so that you match the macros. It will require a little work (I recommend using an online diary like MyFitnessPal for support) but you’ll end up with a plan that works for you and your needs

Hi, I’m still a bit skeptical, I have seen some of my friends do the keto diet, and have had good results. Though I am still not sure about the idea of the fats being eaten. Debbie, Congrats on your weight loss, that’s awesome! We haven’t tried this recipe with bone-in chicken thighs, but if you want to use them to make this recipe we recommend cooking the thighs in the oven and then pulling the meat off the bone, shredded it, and mixing it with the sauce. The objective with this recipe is to cook the chicken (any way you like, poached, baked, grilled, or even rotisserie) until it can be shredded, and then mix the shredded chicken with the creamy sauce. To cook the creamy sauce on the stovetop, we recommend crisping the bacon in a saucepan and then removing it and adding the water and spices. Once the water is simmering, add the cream cheese a bit at a time (slightly softened would probably work best), whisking until it’s incorporated. Cooked this way, you may need to add a splash more liquid (water or broth, if you prefer) to the sauce, because some of the liquid will evaporate off as the cream cheese melts down. Finally, stir in the cooked shredded chicken and shredded cheddar, and serve! If you try it this way, please let us know how it goes!

Hi Paola, I just wanted to confirm how much of the can of tomatoes is required. When I look at the metric measurements it’s 1/2 a 14 ounce can. When I switch to US cups it says 14 ounce can. The high fat content in the diet, especially if you’re eating saturated fats, can raise your cholesterol levels and contribute to developing cardiovascular disease. Without the fiber from whole grains and fruits, you’re also likely to get constipated and have other digestive issues. Plus you need fiber to maintain a health gut microbiome, which tends to come from the kind of whole grains that you can’t eat on the diet, and though it is possible to get enough fiber from vegetables on the keto diet you have to carefully monitor your eating to ensure that. Janie, We haven’t made this recipe in the oven, but yes, we think it would work well! Here’s how we would do it: 1) crisp the bacon on the stovetop; 2) for step 2 in the recipe above, add all ingredients to a 9 by 13-inch casserole dish, cover it with foil, and bake it at 350F until the chicken is fully cooked, about 30 to 45 minutes (the chicken should not be pink in the center, and it should shred easily with a fork); 3) remove and shred the chicken; 4) stir the shredded chicken into the creamy sauce along with the cheddar cheese; 5) top with bacon and scallion and serve. I should note that I fully believe the key to success on a keto diet is to be prepared.  If you precook your meals, you are setting yourself up for success.  You are only choosing to do keto once a week when you prepare your food. If you have no keto food at your house and its 9 pm on a Wednesday, then you are just asking to revert back to something easy like chinese food or pizza.  However, if all you need to do is pull a premade meal out of the fridge and microwave it, you are much better off. Make sure to pick up some rugged, microwaveable containers to store your food. Now then, lets get started!

Two comments: first of all, I’ve only discovered your site recently because (a) I. no longer eat refined sugar, and (b) after a year of no ice cream, I bought an ice cream maker and am making maple syrup sweetened ice cream, with varied success, which brings me to my comments/questions: first, this recipe calls for xylitol or erythritol, and as a person with three dogs, may I just mention that dogs can be killed by consuming xylitol. For this reason, I don’t use it, because they adore ice cream, and I can’t resist giving them a little occasionally…and I might forget. This is important!! Second: I keep reading coconut milk ice cream recipes (and others as well) that jump up and down and insist that these recipes makes this amazing, creamy ice cream, and….it doesn’t. I have made ice cream with coconut milk (full-fat) And coconut cream and it is usually icy, if delicious. Not creamy. Same for my one or two forays into making dairy ice cream to see how that would work. All of it is full of ice crystals and while it may be delicious, creamy it is not, although ice cream made with cashews and plant milk does pretty well. My theory is that commercial ice cream is filled with chemicals and stabilizers and the like, and is therefore what we call creamy. All the ice cream I have made with my Cuisinart ice cream maker freezes hard as a rock, and again–while it may be delicious, it is NOT creamy. Is it possible that I’m doing something wrong? I can’t see that I’m doing anything differently from the various vegan and/or dairy recipes I’ve seen. I’ve used both maple sugar and maple syrup for sweetening, as well as occasionally coconut sugar. My most successful ice cream has been made with plant milk and maple syrup. Getting everything as cold as possible before freezing helps, of course, but it is NEVER creamy. Thoughts?
The second type of cellular fuel comes from fat and fat metabolism products called ketone bodies.   The average sized human body can store hundreds of thousands of calories in the form of fat, so we could say that this system of energy is almost unlimited, depending on how long one goes without food.  Eventually, it would get used up, but people have been known to fast for months and live through it.
"It’s not so easy to get an adult body into ketosis," says Teresa Fung, a professor of nutrition at Simmons College. "That’s why the keto diet is used as a treatment of epilepsy in children or infants—because it’s easier." Kids are growing rapidly, she explains, so their use of food as fuel is different from the way adults use it. Researchers aren’t exactly sure what those differences are, but Fung says it's so hard to get adults into deep ketosis (which is likely deeper than a dieter's target) that often nutritionists don't even attempt it as a therapy. It’s primarily kids who undergo the treatment today.

Nutritional ketosis is a natural metabolic state in which your body adapts to burning fat rather than carbohydrates as its primary fuel. It is clinically proven to directly reduce blood sugar (as measured by HbA1c), improve insulin sensitivity (as measured by HOMA-IR) and reduce inflammation (as measured by white blood cell count and CRP). If you give your body any more than the absolute minimum amount of protein that it needs, it will immediately break it down into carbs. This is why keto sites often give a guideline for not eating too much protein. The trick here is not only to avoid all obvious sourced of carbohydrate (sweets, bread, spaghetti, rice, potatoes), but also to be careful with your protein intake. If you eat large amounts of meat, eggs and the like, the excess protein will converted into glucose in the body. Large amounts of protein can also raise your insulin levels somewhat. This compromises optimal ketosis.

Hubby and I have just started eating low carb and I have to say, we are not finding it too difficult and I already feel sooo much better!! Ketoacidosis is a dangerous condition for diabetics, and the main element is ACID not ketones. The blood pH becomes dangerously acidic because of an extremely high blood SUGAR level (the diabetic has no insulin, or doesn't respond to insulin .... so blood sugar rises ... ketones are produced by the body to provide the fuel necessary for life, since the cells can't use the sugar). It's the high blood sugar, and the acid condition that is so dangerous. Ketones just happen to be a part of the picture, and are a RESULT of the condition, not the CAUSE. Why don’t you make the recipe using exact ingredients for one bread multiplied x 9-10 and divide between 12 muffin tin slots? I think this will work better. This way we are not changing the amount of eggs. If you use less eggs, the bread will be more dry, since it is gluten-free.

Hi Paola, I just wanted to confirm how much of the can of tomatoes is required. When I look at the metric measurements it’s 1/2 a 14 ounce can. When I switch to US cups it says 14 ounce can. Could you let me know which is correct please? Btw I have tried a few of your recipes and all have been amazing. Can’t wait to try more. Especially the cinnamon toast crunch!

Hi Gigi, Low carb and keto is about the balance of macronutrients eaten (fat, protein and carbs), not specifically meat or lack thereof. Most people on keto do eat meat, though some people do vegetarian keto. Fat is actually necessary for many body processes. There is no issue for the kidneys with a high fat diet, but if you eat too much protein that isn’t great for the kidneys. It’s a common misconception that keto is high protein (it isn’t). Keto is great for diabetics as it naturally helps stabilize insulin.
